Butter is composed of milkfat and water (and sometimes salt), and as such is the very first fat we will ever eat. Butter is mostly saturated fat, so many avoid butter and instead consume artificially-solidified, butter-flavored, vitamin-added, vegetable oils in the form of margarine.
But butter is actually a very healthy fat, evolved to nourish baby mammals. The fats in butter, like lauric and butyric acid, boost the immune system and the omega-3 fat conjugated linoleic acid (CLA) protects against cancer and obesity. And butterfat contains many fat-soluble vitamins, like vitamin A, D, E and the rare vitamin K2. Plus, nutrients like zinc, selenium, iodine and choline. So don’t be afraid of butter, it’s actually a good fat!
